Our latest release of Cow Catcher Red will confirm the quality of this exceptional wine, and encourage new fans. Made from fruit that would normally go into the higher end “Estate” brand, production was shifted this vintage, creating a stand-out red wine. A blend of four Bordeaux varietals with a dash of Syrah, this wine was crafted with free-run juice to produce deep fruit flavors. These flavors include dark cherries, tobacco, green olives, and a hint of blackberries. Dark tea, notes of leather, and subtle tannins round out this full-bodied Walla Walla wine. Great acidity and a silky finish make this a great wine to pair with food, or enjoy on its own. BLEND: 48% Cabernet Sauvignon, 26% Cabernet Franc, 15% Merlot, 6% Syrah, 5% Petit Verdot

Fruit for this wine comes from the Minnick Hills Vineyard, just north of the Walla Walla airport. A healthy dose of volcanic ash dominates the bottom portion of the vineyard soil, which was deposited following the eruption of Mt. Mazama 7700 years ago and is now known as Crater Lake in Central Oregon. Lower summer temperatures in 2008 created good acid levels and very well-balanced wines. Deep aromas fill the glass with notes of dark chocolate and hints of tobacco. Rich flavors of cherries, blackberries and currants swirl through the mouth in a full-bodied texture. For the finish, light hints of spice and smoke meld with velveteen. BLEND: 79% Cabernet Sauvignon, 15% Cabernet Franc, 6% Petit Verdot

This is our first release of Cabernet Franc. It has a long history with our winery as a blending grape, but now has a chance to shine on its own. Scents of caramel, ripe blackberries and black olives show on the nose, followed by bay leaf, black tea, some cinnamon. Flavors go beyond what the deep color suggests, including hints of wet Walla Walla dirt and shoe leather. It has great balance, and true to Cabernet Franc, provides a long lasting finish. The majority of the fruit for this very small lot came from the "sweet spot" at Minnick Hills Vineyard. The most significant feature of this wine is its complexity. It is tightly focused at the outset, and then reveals new layers for several hours after opening. The flavors are concentrated with rich dark fruits and elegant spices. This wine has an assertive structure, and yet a finish that lingers pleasantly for several minutes. The 2006 vintage benefitted from perfect conditions during the ripening period, which makes this Merlot over the top with dark fruits and soft tannins. The texture is warm and velvety, and the underlying spices subtle to the point of being an afterthought. This wine is being offered as a library selection through Sunday, May 6th, and due to the limited quantity, we are unfortunately only able to share up to 2 bottles per person.

The flavor profile of the 2006 Cabernet is similar to the 2003 vintage, the first crop from Minnick Hills Vineyard. It displays tons of dark, jammy fruit, blackberries, currants, and huckleberries. It has the spiciness that is characteristic of the Minnick Hills Bordeaux varietals, a little earthy, with lots of bay leaf and sage.
